Bacon Cheddar Grits
Ingredients:
4 cups water
2 cups half and half
2 cups quick-cooking grits
2 cups shredded sharp Cheddar cheese, divided
3 large eggs, lightly beaten
1 teaspoon salt
½ teaspoon pepper
1 cup crumbled cooked bacon, divided
2 tablespoons barbecue sauce
Directions:

Preheat oven to 350 degrees. Spray a 9x9 inch baking dish with nonstick cooking spray.

In a large saucepan, combine 4 cups water and half-and-half. Bring to a boil over medium-high heat. Add grits, stirring to combine, return to simmer. Cook until done, 5 to 7 minutes. Remove from heat. Let cool for 5 minutes.

Add 1 ½ cup cheese, eggs, salt and pepper to grits, stirring well.

In a small bowl, combine ½ cup bacon and barbecue sauce; add to grits. Spoon into prepared dish. Top with remaining ½ cup cheese.

Bake for 30 minutes. Garnish with remaining ½ cup bacon.
