Beef Stew

Ingredients:
  • 1 1/2-2 pounds lean stew beef, cut into even smaller bite-sized pieces
  • 4-5 medium red potatoes, chopped
  • 4-5 medium carrots, peeled and chopped
  • 4 stalks celery, chopped
  • 1 (16 ounce) jar pearl onions
  • 1 (15.5 ounce) can white hominy
  • 3 tablespoons minced garlic
  • 2 (12 ounce) cans or 3 cups vegetable juice cocktail
  • 1 (10 ounce) can condensed tomato soup
  • 10 ounces water (use the can from the tomato soup to measure)
  • 1 teaspoon basil
  • 2 beef bouillon cubes
  • 1/2 teaspoon pepper
 
Directions:
  1. Combine all ingredients in large slow cooker. 
  2. Cook on low 9-10 hours or high 5-6 hours.
