Cheesy Meatballs and Spaghetti

Ingredients:

1 ½ pounds lean ground beef
¼ cup minced onion
¼ cup grated Parmesan cheese
¼ cup dry bread crumbs
2 teaspoons Italian seasoning
2 teaspoons minced garlic
1 teaspoon salt
1 large egg
4 ounces queso blanco prepared cheese, cut into 12 ½-inch cubes
1 24-ounce jar marinara sauce
4 ounces cream cheese, softened
1 8-ounce package spaghetti, cooked and kept warm

Directions:
  1. Preheat oven to 375 degrees.  Line a broiler pan with aluminum foil.
  2. In a large bowl, combine beef, onion, cheese, bread crumbs, Italian seasoning, garlic, salt, and egg.
  3. Shape beef mixture around cheese cubes to form 12 meatballs, making sure cheese cube is completely enclosed.  Place meatballs on rack of prepared broiler pan and bake for 20 minutes or until a meat thermometer inserted in center registers 160 degrees.
  4. Meanwhile, in a small saucepan, combine marinara and cream cheese over medium heat.  Cook, stirring often, for 10 minutes or until cream cheese melts and sauce is smooth.
  5. Serve meatballs with sauce and spaghetti.
