Chicken Bake

Ingredients:
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 package herb-seasoned stuffing mix
  • ½ cup water
  • 2 garlic cloves, minced
  • Olive oil
  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon basil
  • Pinch of salt and dash of pepper
  • 1 cup shredded mozzarella cheese
 
Directions:
  1. Preheat oven to 400 degrees.
  2. In mixing bowl, combine tomatoes, stuffing mix, water and garlic.
  3. Drizzle with a small amount of oil, set aside.
  4. Place chicken in prepared 9x13 inch baking dish and sprinkle with basil, salt, pepper and cheese.
  5. Top with stuffing mixture.
  6. Bake at 20 minutes or until chicken is no longer pink.
