Chicken Tater Bake

Ingredients:
  • 3 cups diced, cooked chicken
  • 2 cans (10.75 ounce) cream of chicken soup, undiluted
  • 1/2 cup milk
  • 1/4 cup butter, cubed
  • 1 (16 ounce) package of frozen vegetables- your choice
  • 1.5 cups cheddar cheese, shredded and divided
  • 1 (32 ounce) package frozen tater tots
 
Directions:
  1. Preheat to 350 degrees.
  2. Cook chicken and dice.
  3. In a large sauce pan, combine the soup, milk, and butter. Cook and stir over medium heat until heated through. Remove from heat.
  4. Stir in chicken and frozen vegetables and 1 cup of cheese.
  5. Transfer to baking dish (2 greased 8-inch square or one greased large pan). 
  6. Top with tater tots and remaining cheese.
  7. Cover and bake at 350 degrees for 35 minutes. Uncover and bake for 5-10 minutes longer.
  8. If desired, cover and freeze one casserole for up to 3 months.
