Chocolate Chess Pie
Ingredients:
1 refrigerated pie crust
1 ½ cups sugar
2 large eggs
1 5-ounce can evaporated milk
¼ cup butter, melted and slightly cooled
3 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1 cup sweetened whipped cream
Directions:

Preheat oven to 375 degrees. Unroll piecrust and pit into a shallow 9-inch pie plate; fluting edges if desired.

In a medium bowl, combine sugar and eggs; beat at medium speed with an electric mixer until blended. Add milk, butter, cocoa and vanilla, beating until smooth. Pour into prepared pie shell.

Bake until a knife inserted near the edge comes out clean, 30-35 minutes. (Middle of pie will jiggle slightly.)

Let cool on a wire rack for 1 hour. Pie will continue to set as it cools.

Serve with sweetened whipped cream.
