Chocolate Pecan Pie

Ingredients:
  • 1 (4 ounce) package German Chocolate squares
  • 3 tablespoons butter
  • 1/3 cup sugar
  • 1 cup light corn syrup
  • 3 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1 cup coarsely chopped pecans
  • Crust for 1 9-inch pie
 
Directions:
  1. Melt chocolate and butter in a medium sauce pan over very low heat, stirring constantly. Remove from heat.
  2. Bring sugar and corn syrup to boil in separate sauce pan over high heat, stirring until sugar is dissolved. Reduce heat and boil gently for 2 minutes, stirring occasionally. Remove from heat and stir in chocolate mixture.
  3. In a large bowl, pour chocolate mixture slowly over eggs, stirring constantly. Stir in vanilla and nuts. 
  4. Pour into pie shell. Bake at 375 degrees for 45 to 50 minutes or until filling is completely puffed across top.
  5. Cool completely.
