Country Club Chicken

Ingredients:
1 cup mushrooms
4 skinless, boneless chicken breasts
Salt and pepper
4 or 5 slices bacon
2 tablespoons butter
1 large onion, chopped
1 apple, preferably Golden Delicious; peeled and chopped
¼ cup white wine or chicken broth
2 cans concentrated cream of mushroom soup, undiluted
1 cup medium cheddar cheese, shredded
1 pound spaghetti
Directions:
1.        Preheat oven to 350 degrees. 
2.        Wash and pat dry the mushrooms then slice. 
3.       Season the chicken with salt and pepper and set aside.  Cook the bacon in a medium skillet.  Drain bacon on paper towels but don’t wipe out the skillet.
4.       Add butter to the skillet and put the chicken breasts in to brown.  Brown chicken on both sides and then transfer to 9x13 inch casserole dish.  In the same skillet, add onion and cook about 3 or 4 minutes; add mushrooms and cook an additional 5 minutes.  Then add the apple and cook another 3 or 4 minutes.
5.       Crumble the bacon and add to the onion mixture with the wine or broth.  Then add the soup and the cheese.
6.       Mix until cheese is melted and pour over chicken breasts. 
7.       Bake for 25 to 30 minutes until chicken is tender and sauce is bubbling.
8.       In the meantime, cook the spaghetti according to package directions. 
9.       Spoon chicken and sauce over cooked spaghetti.
