Sprinkle tomato slices evenly with salt and pepper.
Stir together butter and parmesan cheese. Spread on one side of each bread slice.
Place 4 bread slices, buttered side down, on wax paper. Top evenly with turkey, bacon, tomato, guacamole, Cheddar and Monterey jack cheese. Top with remaining bread slices, buttered sides up.
Cook sandwiches in a large nonstick skillet or griddle over medium heat 2 to 3 minutes on each side or until golden brown and cheese are melted.
