Herb Crusted Sirloin Tip Roast with Creamy Horseradish Sauce

Ingredients:

For Roast:
  • 2 – 2 ½ pounds sirloin tip roast
  • 2 tablespoons olive oil
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced garlic
  • 1 teaspoon black pepper
  • Salt
For Sauce:
  • 1 cup sour cream
  • ½ cup prepared horseradish
  • 2 tablespoons milk
 
Directions:
  1. Heat oven to 325 degrees.
  2. Rub roast with olive oil.
  3. Combine parsley, garlic, pepper and salt; press firmly into roast.
  4. Place roast on rack of shallow roasting pan.
  5. Cook for 1 hour 15 minutes to 1 hour 30 minutes. Check with meat thermometer so as to overcook.
  6. Meanwhile, combine sauce ingredients in small bowl; cover and refrigerate.
  7. Remove roast. Transfer to carving board; tent loosely with aluminum foil. Let stand 10 to 15 minutes.
  8. Carve into thin slices. Serve with horseradish sauce.
