Homemade McGriddles


1 package pancake mix, plus ingredients
Maple syrup
6 eggs
Salt and pepper to taste
1 pound mild pork sausage, formed into patties, cooked and drained
6-8 slices American cheese

  1.  Prepare pancake mix according to package directions.
  2. Measure a ¼ cup of batter and pour onto hot griddle.
  3. When pancake starts to bubble, drizzle maple syrup onto pancake and flip.
  4. Continue making pancakes using all of batter.
  5. Scramble eggs in a medium skillet seasoning with salt and pepper.
  6. Assemble sandwiches by adding eggs, sausage and cheese to pancakes.
