Jalapeno Corn Casserole


2 (11 ounce) cans shoepeg corn, drained
1 (8 ounce) package cream cheese, softened
3 tablespoons butter, softened
1/2 cup evaporated milk
¼ cup chopped jalapeno pepper
1 cup seasoned bread crumbs, divided

  1. Preheat oven to 350 degrees. Spray a 9x9 inch casserole dish with cooking spray.
  2. In a mixing bowl, combine cream cheese, butter and milk until smooth. Stir in corn, jalapeno peppers and ¾ cups bread crumbs. 
  3. Transfer mixture to the prepared dish and sprinkle with remaining ¼ cup bread crumbs.  Cover with lid or foil. 
  4. Bake in a preheated 350 degrees oven for 40 to 50 minutes.
