Kentucky Pie

Ingredients:

4 large eggs, lightly beaten
2 cups sugar
1 12 oz. package semisweet chocolate morsels, melted
2 teaspoons vanilla extract
1 cup sifted self-rising flour
1 cup (2 sticks)butter melted
2 cups chopped pecans
2 9-inch deep dish unbaked pie shells
Ice cream, optional (mandatory)

Directions:
  1.  Preheat oven to 350 degrees.
  2.  Combine eggs, sugar, melted chocolate and vanilla in large bowl.
  3. Add flour and mix well, stirring in remaining ingredients except for pie shells (and ice cream). Bake 50 -60 minutes.  Put pies on cookie sheet in case the filling overflows.
  4. Be careful not to burn crust.  May need to cover with foil for the last 15-20 minutes.
  5. Serve warm with ice cream.
  6. This pie freezes well.
