Key Lime Cake with Cream Cheese Icing

Ingredients:

Cake:
  • 1 ½ cups sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 5 eggs
  • 3/4 cup lime juice
  • 1 teaspoon lemon extract
  • 2 cups plain flour
  • ½ teaspoon baking soda
  • 1 (3 ounce) package lime gelatin
  • 1 ½ cups vegetable oil
  • ½ teaspoon vanilla
 
Icing:
  • 2/3 cup lime juice
  • 2/3 cup powdered sugar
  • 1 ounce cream cheese, softened
  • 1 stick butter
  • 1 box powdered sugar
Directions:
  1. Preheat oven to 350 degrees. Grease 3 8-inch cake pans or 1 9x13 inch pan.
  2. Put first 11 ingredients in large bowl and blend at low speed until moist. Beat 2 to 4 minutes at medium speed.
  3. Pour into prepared pan(s). Bake 30-40 minutes.
  4. Mix 2/3 cup lime juice and 2/3 cup powdered sugar. When cake comes out of the oven and is still warm, prick all over with toothpick. Pour lime juice mixture over cake.
  5. Mix together cream cheese, butter and powdered sugar and blend well. Spread on cake.
