Kiss My Grits and Shrimp

  • 1 cup water
  • 1 (14 ounce) can low-sodium chicken broth
  • ½ teaspoon salt
  • 1 cup quick cooking grits
  • 1 cup half and half
  • ½ pound uncooked shrimp; peeled, deveined and de-tailed
  • 1 cup shredded Cheddar cheese
  1. Bring water, broth and salt to a boil.
  2. Slowly stir grits into boiling liquid. Reduce heat and cook 3 minutes, stirring occasionally.
  3. Add half-and-half and bring back to a boil, stirring constantly. 
  4. Add shrimp; remove from heat, cover and let sit for 10-15 minutes.
  5. Stir in cheese until all melted. If too thick, stir in a little more half and half to desired consistency.
Serves 6
Menu Suggestion:  Serve with fresh green beans or asparagus.
