Lettuce Wraps

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup mushrooms, finely diced
  • 1 small can water chestnuts, drained and finely diced
  • 3 green onions, finely diced
  • 3 cups cooked turkey, diced
  • 2 tablespoons brown sugar
  • 3 tablespoons soy sauce
  • Head of lettuce for serving
  • Chow mien noodles

 
Directions:

  1. In a large skillet heat olive oil over medium heat. Add mushrooms, water chestnuts and green onions. Cook until vegetables are tender.
  2. In a small bowl, stir together brown sugar and soy sauce. Add to vegetable mixture and mix well.
  3. Add turkey and cook over medium heat until heated through.
  4. Tear off large leaves of the lettuce and fill with turkey mixture. Sprinkle with chow mien noodles and roll up.
