Monterey Chicken
Ingredients:
4 boneless, skinless chicken breasts
Pepper, to taste
1/4 cup BBQ sauce
1 cup colby and jack cheese, shredded
1 14 oz. can Rotel tomatoes, drained ( with green chilies added)
Sliced green onions, to taste
¼ cup real bacon bits
Directions:

Preheat oven to 400 degrees.

Pound out chicken breasts to flatten. Season with pepper. Grill chicken until no longer pink and place on a baking sheet covered with foil.

Top each chicken breast with one tablespoon BBQ sauce, ¼ cup cheese, ¼ cup tomatoes, green onions and one tablespoon bacon bits.

Place in oven and bake until cheese is melted, about 5 minutes.
