Oatmeal Raisin Bars

Ingredients:
  • 3/4 cup (1 1/2 sticks) butter, melted
  • 3/4 cup packed light-brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 2 cups old-fashioned rolled oats (not quick-cooking)
  • 1 cup raisins

 

Directions:

  1. Preheat oven to 350 degrees. Spray an 8-inch square baking pan with cooking spray.  
  2. In a large bowl, whisk together butter, sugars, egg, salt, and cinnamon until smooth. Add flour, oats, and raisins; fold in until combined.
  3. Spread batter in prepared pan, and bake until a toothpick inserted in center comes out with moist crumbs attached, about 25 to 30 minutes. Cool completely in pan.
  4. Makes 16 bars.
