Peach Pecan Pie
Ingredients:
1 unbaked 9-inch pie shell
1 8-ounce package cream cheese, softened
2/3 cup sugar, divided
4 eggs, divided
2 teaspoons vanilla, divided
1 cup pecan halves
1 cup light corn syrup
3 fresh peaches, peeled, pitted and sliced
Directions:

Preheat oven to 375 degrees.

Combine cream cheese and 6 tablespoons of sugar; beat with mixer until well blended.

Add 1 egg and 1 teaspoon of vanilla; beat until well blended. Pour into crust. Sprinkle evenly with pecans.

Beat remaining 3 eggs, corn syrup, remaining sugar and vanilla with mixer until creamy. Pour over pecans.

Top with peach slices in a fan design.

Bake 40-45 minutes or until center of pie is set, covering edge with foil during the last 10 to 15 minutes to prevent over-browning, if necessary. Cool on rack.
Place sheet of foil or cookie sheet on a lower oven rack to protect bottom of oven from bubbling pie juices.
