Perfect Roasted Turkey

1(12 pound) fresh or frozen turkey
Sea salt
Black pepper
1 large bunch fresh thyme
1 lemon, halved
1 medium onion, quartered
1 head garlic, halved crosswise
4 tablespoons unsalted (1/2 stick) melted butter
Directions:
  1.  Preheat the oven to 350 degrees.
  2. Thaw frozen turkey according to label directions. 
  3.  Take the gibletsout of the turkey and wash the turkey inside and out. Remove any excess fat and pat the outside dry.
  4. Place the turkey in a large roasting pan, breast side up.   Liberally salt and pepper on the inside of the turkey cavity. Stuff the cavity with the thyme, lemon, onion, and the garlic.
  5. Brush the outside of the turkey with the butterand sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey.
  6. Loosely tent the turkey with aluminum foil. 
  7. Roastthe turkey for 2 hours, basting from every 30 minutes with pan juices. Remove the foil and brown turkey approximately 30 minutes.   Insert meat thermometer into the thickest part of the thigh.  When turkey is done, the temperature should read 180 degrees and juices will run clear when you cut between the leg and the thigh. 
  8.  Remove the turkey to a cutting board and cover with foil; let it rest for 20 minutes. Slice the turkeyand serve hot.  8 servings.
