Pesto Potato Salad

Ingredients for Dressing:

1 cup mayonnaise
2 Tablespoons prepared pesto
Ingredients for Salad:
4 c. peeled, diced potatoes, cooked
2 eggs, boiled and chopped
1/2 c. chopped celery
1/2 c. sliced green onions
1/2 c. diced red bell pepper
1-1/2 cups Monterey jack cheese, cubed

Directions: 

1. In a small bowl, combine dressing ingredients; set aside.
2. In a medium bowl, combine potatoes, eggs, celery, onion, pepper and Monterey Jack cheese. Add dressing. Toss lightly.  Chill.
