Pineapple Casserole submitted by Patti Penley, First Runner-Up in the Side Dish Category

  • 3 tablespoons all-purpose flour
  • ½ cup sugar
  • 1 (20 ounces) can pineapple tidbits, drained (reserve juice)
  • 3 tablespoons of the reserved juice
  • 1 cup cheddar cheese, grated
  • 15 Ritz crackers, crumbled
  • ¼ cup melted butter

  1. Mix flour and sugar. Add pineapple, pineapple juice and cheese.
  2. Pour into casserole dish.
  3. Mix together crackers and butter; sprinkle on mixture.
  4. Bake at 350 degrees for 30 minutes.
