Potato Candy

  • 1 medium baking potato, cooked
  • 1 box confectioners’ powdered sugar + some for sprinkling on work surface
  • Creamy peanut butter
  1. Peel potato and mash completely; gradually stir in sugar. Mixture will be very stiff.
  2. Work mixture into a ball; roll into a rectangular shape on work surface. Work surface should be covered with powdered sugar. 
  3. Cover the mixture generously with the peanut butter. 
  4. Starting with the long side, roll into jelly roll. Cover and chill in refrigerator for about 1 hour.
  5. Cut with very sharp knife into ½ inch pieces.
