Rosalie’s Round Roast submitted by Rosalie Beasley, First Runner-Up in the Main Dish Category

Ingredients:
  • 3 to 4 pounds Angus chuck roast beef
  • ½ jar horseradish
  • Salt and pepper to taste
  • 1 small onion, diced
  • 1 package McCormick’s brown gravy mix
  • 2/3 cup water

Directions:
  1. Line baking pan with enough foil to be able to bring the sides of foil up over the roast to seal in flavor.
  2. Place roast, horseradish, salt, pepper, onion and gravy mix in foil. Seal tightly.
  3. Roast in oven at 275 to 300 degrees for 3-4 hours. (do not peek)
  4. Add water to pan. May need to add more to keep oven moist. 
  5. Roast will be fork tender.  Scrape top layer for a delicious gravy for side dish of potato, boiled or mashed.
