Sausage and Noodle Casserole

Ingredients:
  • 1 (8 ounce) package medium egg noodles, uncooked
  • 1 (16 ounce) package of mild ground pork sausage
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (8 ounce) carton of sour cream
  • 1/2 cup crumbled blue cheese
  • 1 (4.5 ounce) jar sliced mushrooms, drained
  • 1 (2 ounce) jar diced pimentos, drained
  • 2 tablespoon finely chipped green bell pepper
  • 1/2 cup soft breadcrumbs
  • 1 tablespoon butter, melted
Directions:

 

  1. Cook noodles according to package directions, drain and set aside. 
  2. Brown sausage in a large nonstick skillet, stirring until it crumbles. Drain and set aside.
  3. Combine soup, sour cream and blue cheese in a large saucepan. Cook over medium heat, stirring constantly until cheese melts.
  4. Add noodles, sausage, mushrooms, pimento and bell pepper, tossing to coat.
  5. Spoon mixture into a lightly greased 11x7x1.5 inch baking dish. 
  6. Combine bread crumbs and butter. Sprinkle over casserole. Bake at 350 degrees for 30 minutes.
