Skinny Dip

Ingredients:
  • 1 (15.5 ounce) can black beans, drained and rinsed
  • 1/2 small onion, chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 1 teaspoon grated lime zest
  • 1/2 teaspoon Tabasco sauce
  • Salt and pepper to taste
  • 2 teaspoons taco seasoning
  • 1 (16 ounce) container fat-free sour cream
  • 3 avocados, peeled, pitted and diced
  • 1 (16 ounce) jar salsa
  • 1 1/2 cups shredded low-fat Cheddar cheese
  • 1/2 cup sliced black olives
  • 1/4 cup sliced jalapeños
  • Tortilla chips for serving
 
Directions:
  1. In a large bowl, mash beans and add onion, cilantro, 2 tablespoons lime juice, zest, Tabasco, salt, pepper and 2 tablespoons hot water. Mix until smooth.
  2. Stir taco seasoning into sour cream.
  3. On a platter, layer bean mixture, sour cream, salsa and avocados. Sprinkle with cheese and scatter olives and jalapeños over top.
  4. Serve with tortilla chips.
