Slow Cooker Pot Roast and Vegetables

Ingredients:

  • 4 pound chuck, round or rump roast
  • Olive oil
  • 2 tablespoons minced garlic
  • Garlic salt
  • Salt and pepper to taste
  • Montreal Steak Seasoning, to taste
  • 1 can beef broth
  • 1 packet dry onion soup mix
  • 3 cups baby carrots
  • 2 -3 medium Vidalia onions, cut in wedges
  • 5-6 medium potatoes, peeled and cubed


Directions:

  1. Rub the roast with olive oil and then sprinkle with minced garlic, garlic salt, salt, pepper and steak seasoning. 
  2. Brown the roast on all sides in a little olive oil in a large skillet over high heat. 
  3. Place in the slow cooker with beef broth.
  4. Sprinkle with dry onion soup mix.
  5. Cover and cook 7 to 8 hours.
