Spicy Honey-Lime Grilled Drumsticks
Ingredients for Drumsticks:
8 chicken drumsticks
1 teaspoon salt
½ teaspoon pepper
Vegetable Cooking Spray
Garnishes: fresh cilantro leaves and lime wedges
Ingredients for Spicy Honey-Lime Barbecue Sauce:
¼ cup butter
1 medium onion, diced (about 1 cup)
1 (12 ounce) bottle chili sauce
¼ cup honey
2 Tablespoons fresh lime juice
¼ teaspoon pepper
Directions for Drumsticks:

Sprinkle chicken with salt and pepper. Let stand, covered, for 30 minutes.

Coat cold cooking grate of grill with cooking spray and place grate on grill. Preheat grill to 350 to 400 degrees heat.

Grill chicken; covered with grill lid, 5 to 10 minutes on each side or until browned. Reduce grill temperature to 250/300 degrees heat; grill chicken, covered with grill lid, 20 to 30 minutes.

Meanwhile, prepared Spicy Honey-Lime Barbecue Sauce. Reserve 1 cup sauce.

Brush chicken with remaining sauce. Cover with grill lid, and grill 10 more minutes until done. Serve chicken with reserved 1 cup sauce.
Directions for Spicy Honey-Lime Barbecue Sauce:

Melt butter in a small saucepan over medium heat; add onion and sauté 4-5 minutes or until tender. Stir in chili sauce; next 3 ingredients and 1/3 cup water; bring to a boil.

Reduce heat to low, and simmer 5 minutes.

Store in refrigerator up to 1 week.
