Squash Dressing by Shirley Strickland – Winner in the Side Dish Category

Ingredients:

  • 2 cups cooked, drained and mashed yellow squash
  • 2 cups crumbled cornbread
  • 1 (10 ounce) Can of cream of chicken soup
  • 1 small onion chopped
  •  ½ cup margarine, melted
  • Crumbled sage to taste (start with ½ teaspoon)
  • Salt and pepper to taste
  • 3 large eggs, lightly beaten


Directions:
 

  1. Combine first 5 ingredients.
  2. Add seasonings to taste, stir in eggs, pour into greased 2-quart baking dish.
  3. Bake at 350 degrees for 40-45 minutes.

Serves 8.
