Strawberry Nut Bread (for the Fruit and Nut Lover)


3 cups all purpose flour, sifted
1 teaspoon baking soda
2 cups sugar
1 teaspoon cinnamon
1 teaspoon salt
4 eggs, beaten
1 ¼ cup oil
2 cups thawed, sliced frozen strawberries
1 ¼ cup chopped pecans
  1.  Combine dry ingredients.
  2. Add eggs, oil, strawberries and pecans; stir just until all the ingredients are moistened.
  3. Pour batter into 2 greased 9x5x3-inch loaf pans.
  4. Bake at 350 degrees for 60-70 minutes or until bread tests done.
  5. Cool in pans for about 10 minutes; then remove to wire rack to cool.
