Sweet Potato Pound Cake and Glaze

For Cake:
  • 1 cup butter, softened
  • 2 cups sugar
  • 2 cups (about 2 medium) cooked, mashed and cooled sweet potatoes
  • 1 teaspoon vanilla
  • 4 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
For Glaze:
  • 1 cup sifted confectioners’ sugar
  • 1 tablespoon orange juice
  1. Preheat oven to 350 degrees. Grease and flour a 10-inch tube pan.
  2. Beat together butter and sugar with electric mixer until light and fluffy. Add sweet potatoes and vanilla; beat until well combined. Add eggs, one at a time, beating for 1 minute after each addition.
  3. In a large bowl, stir together flour, baking powder, cinnamon, soda, nutmeg and salt. 
  4. Slowly add flour mixture to potato mixture. Beat on low speed until just combined.
  5. Pour batter into pan. Bake 1 hour 20 minutes or until toothpick comes out clean.
  6. Cool cake in pan on wire rack for 20 minutes.
  7. Place on cake plate and drizzle with glaze.
  8. For Glaze: Stir together sugar and orange juice. Glaze will need to have a drizzling consistency so additional orange juice may need to be added. Spoon over warm cake. Cool completely before serving.
