Tomato Basil Cheese Tart
Ingredients:
4 large firm ripe tomatoes, peeled and sliced 1/3 inch thick
1 9-inch prebaked deep dish pie shell
Olive Oil
Pepper to taste
2 cups grated cheese (suggested: part skim mozzarella and fresh grated parmesan)
1/2 cup chopped fresh basil
1 cup light mayonnaise
½ cup chopped green onion, if desired
3 Basil springs, for garnish
Directions:

Preheat oven to 350 degrees.

Lay tomatoes out on paper towels. Drain away extra juice by patting the tomatoes gently.

Layer the tomatoes in pie shell, brush with extra virgin olive oil. Season with pepper. Combine the grated cheeses, fresh chopped basil and mayonnaise together.

Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm. Top with green onion and fresh basil sprigs , if desired.
