Twice Baked Ranch Potatoes

  • 2 large baking potatoes
  • 1 medium onion, chopped
  • 4 slices bacon
  • ¼ cup ranch dressing
  • ½ grated cheddar cheese
  1. Bake potatoes in 400 degree oven until tender (45-60 minutes).
  2. Cook bacon until crisp; pat dry and crumble.
  3. Sauté onion in a little olive oil until soft.
  4. Cut potatoes in half and scoop them out leaving ¼-inch shell.
  5. Mash potatoes until smooth and mix in onion, bacon, ranch dressing and cheese.
  6. Put potato mixture back into skins and put back in 350 degree oven until heated through.
