Boneless Pork Loin with Mango/Pineapple Salsa

Ingredients:
Pork Loin:

2 (1 pound) pork tenderloins

3 tablespoons brown sugar
-
3 tablespoons Dijon mustard
Mango/Pineapple Salsa:
-
1 cup fresh mango, cut into ½ inch chunks

1 cup fresh pineapple, cut in ½ inch chunks

1 1/2 cups salsa
-
1 cup canned black beans, drained

1 tablespoon brown sugar
Directions:
Pork Loin:

Place pork on a greased rack in foil-line shallow roasting pan. Combine the brown sugar and mustard; spread over the pork.

Bake, uncovered at 425 degrees for 35-40 minutes until a meat thermometer reads 160 degrees.

Let stand for 5-10 minutes before slicing.
Mango Pineapple Salsa: Mix all salsa ingredients together in a bowl and serve with pork.
