Broccoli Apple Salad by Brenda Hambrick – Winner in the Soup/Salad Category Ingredients:

  • 2 cups broccoli flowerettes
  • 2 Granny Smith apples, cored, diced and peeled (or unpeeled)
  • ¼ cup apple cider vinegar
  • ¼ teaspoon salt
  • ¼ cup sugar
  • 1/8 teaspoon pepper
  • ¼ teaspoon dry mustard
  • ¼ cup oil
  1. Toss together broccoli flowerettes and apples.
  2. Mix together vinegar, salt, sugar, pepper and dry mustard. Slowly add oil.
  3. Pour over broccoli and apple mixture. 
  4. Chill and marinate for a few hours before serving. 
  5. Will keep for four days.
