Carrot Casserole

  • 2 cups mashed cooked carrots
  • ½ cup butter, melted
  • ½ cup firmly packed brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 3 large eggs, well beaten
  • Dash ground cinnamon
  1. Preheat oven to 400 degrees.
  2. Lightly grease a 2-quart baking dish.
  3. In a large bowl, combine carrots, butter, sugar, flour, baking powder, eggs and cinnamon.  Spoon into prepared baking dish and bake for 12 minutes.
  4. Reduce oven temperature to 350 degrees and bake 45 minutes longer.
