Fiesta Chicken
Ingredients:
1 16-ounce jar medium salsa
4 boneless, skinless chicken breasts or 6-8 boneless, skinless chicken thighs
1 6.2-ounce package rice mix in desired flavor
1 15-ounce can black beans, rinsed and drained
1 8-ounce carton fat-free sour cream
Additional salsa
Directions:

Preheat oven to 350 degrees. In a 2-quart baking pan, pour half of salsa.

Top with chicken breasts (or thighs) and pour other half on top.

Cover with foil and bake 30 minutes or until chicken is no longer pink.

Cook rice mix according to package directions. Heat beans in microwave.

Serve the chicken topped with salsa, sour cream, black beans and rice.
