Sweet Potato Fries


4 medium sweet potatoes, peeled
Olive oil
1 tablespoon coarse sea salt
1 tablespoon coarse black pepper

  1.  Preheat oven to 425 degrees.
  2. Line a cookie sheet with parchment paper. 
  3. Cut sweet potatoes in ¾ inch thick slices and place in a large boil.  Drizzle slices with enough olive oil to coat and place on cookie sheet.  Sprinkle with sea salt and pepper.
  4. Bake for 15 minutes, then turn and bake for additional 10 minutes.
