T-Bone Steaks with Fresh Spinach


1 teaspoon olive oil
4 slices thick-sliced bacon, chopped
1 garlic clove, minced
1 ¼ pound spinach, rinsed but not dried
Salt and pepper, to taste
4 T-Bone steaks, about 1 inch thick

  1.  Prepare the grill for direct heat over high heat. 
  2. In a sauce pan over medium heat, warm the oil.  Add the bacon the cook, stirring occasionally, until cooked, about 5 minutes. 
  3. Add the garlic and cook until fragrant, about 30 seconds.
  4. Stir in spinach a handful at a time and cook just until wilted, about 5 minutes total.  Season with salt and pepper.  Cover the pan and keep warm.
  5. Season the steaks with salt and pepper.  Lightly oil the grill rack.  Grill the steaks, turning once, 6-8 minutes totally for medium-rare.
  6. Transfer the steaks to warm plates and spinach to serving bowl and serve.
