T-Bone Steaks with Fresh Spinach
Ingredients:
1 teaspoon olive oil
4 slices thick-sliced bacon, chopped
1 garlic clove, minced
1 ¼ pound spinach, rinsed but not dried
Salt and pepper, to taste
4 T-Bone steaks, about 1 inch thick
Directions:

Prepare the grill for direct heat over high heat.

In a sauce pan over medium heat, warm the oil. Add the bacon the cook, stirring occasionally, until cooked, about 5 minutes.

Add the garlic and cook until fragrant, about 30 seconds.

Stir in spinach a handful at a time and cook just until wilted, about 5 minutes total. Season with salt and pepper. Cover the pan and keep warm.

Season the steaks with salt and pepper. Lightly oil the grill rack. Grill the steaks, turning once, 6-8 minutes totally for medium-rare.

Transfer the steaks to warm plates and spinach to serving bowl and serve.
