Thai Chicken Pizza


1 refrigerated pizza crust or prepared crust
Cornmeal, for dusting
1 cup BBQ sauce
1/3 cup peanut butter
2 cups mozzarella cheese, shredded
1 rotisserie chicken, meat pulled off and shredded
¼ cup chopped onion
1 carrot, grated
1 cup bean sprouts
1 cup chopped peanuts

  1.  Preheat oven to 425 degrees.
  2. Sprinkle cornmeal out on your work surface and roll dough out to a 16 inch circle.
  3. Place crust on a pizza stone or a pizza pan.
  4. Combine BBQ sauce and peanut butter and spread evenly over pizza crust.
  5. Sprinkle cheese over crust and top with chicken.  Sprinkle onion, carrot and bean sprouts on top of chicken.
  6. Bake about 12 – 15 minutes, until crust is golden brown.
  7. Garnish with chopped peanuts.
