White Bean Chicken Chili

Ingredients
:
2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can chicken broth
2 (16 ounce) can diced tomatoes with chilies
1 teaspoon chili powder
1/2 teaspoon dried oregano
2 cans white shoe-peg corn
1 pound diced, cooked chicken meat
2 (15 ounce) cans white beans
1 pinch salt and black pepper to taste
Directions
:
Heat oil, and cook onion and garlic until soft.
Stir in broth, tomatoes and spices. Bring to a boil, and then simmer for 10 minutes.
Add corn, chicken, and beans; simmer 15 minutes. Season with salt and pepper to taste.
